Lately I have been rather curious about the Paleo diet and I can definitely see why some do really well on it.  I think the most important thing is to get to know your body and find the right diet that will best benefit your health. With that said, there will be trial and errors but you might have some fun in between.

For me, eating closest to earth is what makes sense.  Although I sill consume meat, I have learned to reduce my red meat intake by 75%, increasing fish and chicken consumption.  I have also adjusted to meatless meals and I find that munching on nuts after these “lighter” meals can be quite filling and gets the job done.  I have learned that eating a lighter and low-carb meal can be just as satisfying and at the same time healthier and more nutritional.

But here are my two biggest enemies… PASTAS AND RICE! I am sure some of you can understand the root for this resistance, as these are not only considered the two main sources of carbohydrates but also a rather delicious way to complete a meal.  Just think about how many different yummy dishes you can make with a box a ziti !  Being Brazilian doesn’t help my obsession with rice either…

But I am actually here to convince you to ditch the heavy carbs and move on to a new lifestyle of low-carbs, nutrition filled and tasty sides that can take your healthy diet to a whole new level.  As for the rice and pastas, to not be unfair, there are great option as well which DOES NOT include the white stuff, those have no nutritional value whatsoever.  These types of carbs turns into sugar that turns into fat (the type of fat that sits around your belly).  Instead opt for brown rice pastas and brown rice or wild rice, with limitations.

The Paleo Cauliflower Rice is a simple and delicious side dish made with cauliflower florets, shredded into rice size pieces and cooked with coconut milk for a more filling and satisfying meal.  Coconut milk by the way is the healthy fat you want to be adding to your diet.  The medium-chain triglycerides found in coconut milk may increase your metabolism and perhaps increase weight loss.

In conclusion, this is a great side option for those who are looking to improve their health through eating, perhaps shed a few pounds, but specially for those who are following the Paleo, Vegan and Gluten-free diet because it not only meets the criteria but it provides your body with great nutrition and satisfaction, thanks to the coconut milk.

Paleo Cauliflower Rice

Cook: 7 minutes
Total: 12 minutes
Servings: 2 servings

Ingredients 

  • 1 lg cauliflower head
  • 1/2 c coconut milk
  • 1 tbsp coconut oil
  • 1 tbsp garlic paste
  • salt to taste

Instructions 

  • Cut the cauliflower head into quarters
  • Using a box cheese grater, shred the cauliflower into rice size pieces
  • Heat a skillet with coconut oil. Add the garlic paste and salt
  • Add the cauliflower florets and coconut milk
  • Cook for 7-8 minutes. At that point there will still be liquid in the pan
  • Use a fine mesh strainer to get rid of the excess liquid
  • Arrange the cauliflower rice in a serving bowl and enjoy this delicious dish warm or cold
